To prepare these baked potatoes the first thing we will do is to preheat the oven to 200º C with heat up and down. As we are going to cook the potatoes in the oven with the skin, we will wash them very well to remove all the remains of soil, we will cut them in half or if they are a little big in quarters. With a knife we will cut the potatoes into small squares, as this way they will cook better and absorb the flavours of the spices better.

In a large bowl place the spices (rosemary, thyme, oregano, etc.), the garlic cut in half. The ground black pepper and the salt. Add extra virgin olive oil and the potatoes.

Then we stir the potatoes well so that they are well impregnated with the oil and spices. Spread olive oil on a baking tray and place the potatoes on the tray with the skin side up. Put in the oven and bake at 180º C for about 25-30 minutes (depending on the size and quality of the potatoes). After this time, if the potatoes are roasted, prick them with a toothpick. If the toothpick comes in and out easily, the potatoes will already be baked.

We now have the baked potatoes ready with spices and garlic. This is a very easy to make garnish and can be prepared at the same time in the oven as the main dish we are cooking.
